Crispy Pan Pizza

Everyone loves that familiar, most popular pizza crust that has the soft center and the deep crispy golden edges and bottom. The Pan Pizza.

Now you can make it right in your home. It is super simple, but I have to admit it is a little time consuming. Remember what your parents would always say ‘good things come to those who wait’. Trust me your patience will pay off!

Ingredients:

  • 11 oz. Bread Flour
  • 8 oz. Warm Water (105-110 degrees)
  • 1 tsp. Salt
  • 1 tsp. Rapid rise yeast
  • 3 Tbs. Extra virgin olive oil
  • 1- 1 1/2 cup Monterey Jack Cheese
  • 1-2 cup Mozzarella Cheese
  • 8 oz Pizza sauce
  • Your favorite toppings

Directions:

Mix the flour, salt, yeast and water with a wooden spoon until it separates from the sides of the bowl.

Knead for 1 min until it comes together

Plop onto a well greased 9” pie plate and spread out to the edge.

Cover with Saran Wrap and let it rest in the fridge for 12-24 hrs.

After 12-24 hrs pull the dough out and let it rest for 30 min.

Then add 3 Tbs. of EVOO to your cast iron pan and spread around.

Flip the dough onto the cast iron pan, push the dough to the edge. Rest again for 1 1/2 hrs.

Add your favorite pizza sauce.

Spread the Monterrey Jack cheese to the edge of the crust building a short wall up the sides (about 1/2” tall). Add mozzarella cheese to the center and the rest of the pizza then add your favorite toppings.

Repeat the cheese and toppings in as many layers as you would like.

Bake at 400 degrees for 25-30min at the lowest oven rack.

Once it’s done let it rest for 3 min and then using a butter knife separate the edge of the crust from the pan

If you want the bottom of your crust a little more done set it on the stove over medium heat for 3- 5 more min.
