This isn’t just for a picnic! This loaded baked potato salad makes a great side dish to go with any beef, chicken or pork dinner.

Ingredients:
6 med. baking Potatoes (~2#)
3/4 cup Sour Cream
3/4 cup Mayonnaise
8 Slices bacon, Crispy cooked,drained,Chopped (~1/2 cup)
1/2 c. chopped red Onion
1/2 c. chopped Celery
1/2 tsp. salt
1/4 tsp. Ground black pepper
Thinly sliced green Onions (optional)
Shredded cheddar Cheese (optional)
Directions:
Pre heat oven 325°F. Scrub potatoes thoroughly and pat dry with paper towel. Spray Potatoes with vegetable oil.
Prick potatoes.
Bake 50-60 min. or until tender.
While Potatoes are baking Combine Sour Cream and mayonnaise in small bowl. Chop bacon, red onion, Celery, add Sour Cream mixture. Stir in black pepper & cover with lid.
Refrigerate until ready to Serve. Remove potatoes, Cool Completly. Chop potatoes into 1/2″ pieces. Place in Lg. bowl Stir in Sour Cream mixture. Cover and Refrigerate 4hrs. or overnight. Garnish with green onions And Cheddar Cheese.
